Easy Granola

- 2 cups nuts of your choice

- 1/4 cup pumpkin seeds 

-2 TBSP chia seeds

-2 TBSP ground flax seeds

-2 TBSP hemp seeds 

- 2 tsp cinnamon

- 1/4 tsp salt

-1/4 cup maple syrup


Toast the nuts and seeds over medium heat until they get fragrant (about 5 minutes), then add cinnamon and salt, followed by the maple syrup. Mix and remove from heat until cool.

Enjoy!

Oatmeal Quinoa Bowl

- 1/4 cup uncooked oats

- 1/4 cup cooked quinoa

- 1/2 cup almond milk

- 1/4 cup frozen or fresh blueberries

- 1 tbsp ground flax seed

- 2 tbsp almond butter

- 2 tbsp maple syrup


Cook all ingredients (approx 5 minutes) until berries are soft. Transfer to a bowl and top with your favorite ingredients. My favorites are sliced bananas, walnuts, hemp seeds and pumpkin seeds.

Veggie Stir Fry

So easy!  Use fresh or frozen fry vegetables (3-4 cups).  Costco frozen stir-fry veggies work great here.  Cook veggies until fork tender, then add:

- 4 tbsp liquid aminos, tamari or soy sauce

- Dash of chinese five spice powder


Mix 2 TBSP cornstarch into a 1/4 cup cold water, then pour on top of veggies. The stir fry will thicken as it warms. Serve over Lotus Foods ramen or brown rice.

Lazy boy caviar

-1/2 cup diced cherry tomatoes 

-1/2 cup diced red onions 

-1/3 cup  cilantro 

-2 avocado's 

-drizzle with olive or avocado oil

-season with salt 


I love eating this refreshing salad with cucumber slices or tortilla chips.

Family

Meet my family. My husband Brandon and I have been married for 15 years. We celebrated by taking the family to Mexico! Bella is 12 and Ian is 9. Picking pumpkins is one of our favorite fall traditions. 

Pets

We have two mini dachshunds, Milo and Millie. They are hands down the best snugglers ever!

Adventure

In the fall of 2020, our family went on a 2 week road trip to the Grand Tetons (pictured here) and Yellowstone National Park. You can see our whole journey by checking out our YouTube channel (Here). 

It was the best trip we have ever taken! It bonded us as a family and solidified our love for camping and adventure. It also gave us a deeper appreciation for nature, reflection, and no internet reception.
